    Ingredients to prepare barbecued calçots

    • 10 calçots per person
    • 2 red tomatoes
    • 4 cloves of garlic
    • 2 dry small ñoras
    • 25 grams of toasted almond
    • 1 slice of fried bread
    • Salt
    • Vinegar
    • Extra virgin olive oil

    Preparation of romesco sauce

Before thinking about going to a barbecue of calçots, should not you prepare a sauce that goes with them? The best is romesco sauce! And to elaborate it, follow the following steps:

    1. Put the ñoras to soak the night before, in a large amount of water. In case you do not have a lot of time, at least you'll have to have them soaking for two hours.
    2. Heat the oven to 180 º C for about 10-15 minutes to take the temperature. Then peel the cloves of garlic and together with the tomatoes you put them in the oven for about 20 minutes, to roast them well.
    3. In what is done about the oven, you remove the meat from the oven, with great care. You can buy the fried bread either ready or do it yourself. If you prepare it on your own, remember that you will need to place it on a tray with absorbent paper to release the excess oil.
    4. Almonds you can also buy toast. But if they are tender, with a little olive oil, fry them a little in a pan, until they get good color.
    5. With all the ingredients ready, you put them inside the crusher and start crushing, along with a splash of olive oil and vinegar, plus a small teaspoon of salt. Crush everything and you will see how a creamy mixture is formed.
    6. Check the taste. If you see that it is too thick for your taste, you can add more vinegar or olive oil. Check the salt point to rectify it if necessary. When it's ready, you should let it sit for at least an hour in the fridge.

    Preparation of barbecued calçots

    1. First of all you're going to have to light the barbecue. If it is charcoal or firewood, you know that it will take a long time to warm up. Instead, a gas or electric will be ready right away. The best to prepare this dish is coal.
    2. The moment the coal is red hot, place the calçots between the two grids. You can place several calçots at the same time.
    3. When you see that the embers are ready, then bring the calçots to the fire, but do not touch them directly. Wait until the calçot comes out a few drops of water, at which time you'll have to turn it around.
    4. Repeat the process with all the calçots until they are all done. As you go out of the fire, wrap them with newspaper, so they keep the heat better until they are all.
